
Gnocchi all sorrentina ❤️ Perfect if you can’t get hold of pasta at the moment!
I got the idea from the culinary inspiration that is Today We Cooked and we followed her recipe but doubled to feed our big fam – so 1kg of potatoes, mashed with a good few glugs of olive oil, and 4 cups of flour. Boil in batches for a couple of mins until they float, then fry in a frying pan until a bit golden and crisp – frying the gnocchi after boiling really makes gnocchi perfect 👌- bit more faff but don’t skip that step.
Didn’t fancy pesto so baked with tomato sauce, homemade vegan ‘mozzerella’ and basil – heaven and clean plates from all the kiddos 😍❤️ L x
