Vegan American Style Breakfast Pancakes Recipe

Yummy, fluffy vegan american style breakfast pancakes that are just perfect topped with your favourite fruits and maple syrup.

Our girls both really love pancakes, and we tried a lot of vegan recipes before finding one we really loved and I have been meaning to share it here for ages.

Even thought these are milk and egg free they are still absolutely delicious and they still get a really good rise from the baking powder.

A perfect treat for the weekend!

Vegan American Style Breakfast Pancakes

Ingredients:

    To serve one person:

    • 1/2 cup flour (white / wholemeal or a mix of both)
    • 1/2 tablespoon sugar
    • 1/2 a teaspoon baking powder
    •  A pinch of salt
    • 1/2 cup of non-dairy milk
    • 1 tablespoon oil (vegetable / olive)
    • Splash of vanilla extract

    Directions:

    1. Mix all the dry ingredients together.
    2. Add the non dairy milk, oil and vanilla and mix to form a smooth batter. 
    3. Put a frying pan over a medium heat.
    4. Spray the pan with a bit of oil then add the mixture the pan a bit at a time, cook until bubbles appear then flip and cook until both sides are done.
    5. Serve topped with your favourite toppings – I like banana, blueberries, raspberries and maple syrup.
