Sunshine in a bowl! This really simple carrot soup recipe is super popular with kids and easily jazzed up for adults by adding some fresh coriander. It’s a great go to when the fridge is pretty bare and I haven’t got much to cook with 🙂

1 medium to large onion (chopped)
1 garlic clove (sliced)
10 medium carrots (chopped into chunks)
1 tablespoon coconut oil
1 litre vegetable stock
Optional: fresh chopped coriander
1) Add oil to a large saucepan and fry all veggies for 5 mins until softened.
2) Add stock and simmer, covered, for 15 mins until carrots are well cooked.
3) Blend, season and top with coriander if using.
