
Is there a dish you reckon you could eat for every meal for the rest of your life? This might be it for me 😍 Veg (onion, aubergine, courgette, mushrooms and peppers) roasted for about 40 mins with olive oil and loads of garlic and herbs (parsley, basil, oregano), then tossed in a frying pan with a glug more oil, more garlic, salt, fresh parsley and a touch of chilli. Tossed with spaghetti and topped with my vegan parmesan (homemade) 🤤 Soooooo good. L x
