Vegan Chia Seed Pancakes

Ingredients:

  • 1 cup plain flour
  • ½ cup wholewheat flour
  • 1 teaspoon baking powder
  • 1 tsp salt
  • 3 tbsp chia seeds
  • 1 tsp cinnamon
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1½ cup almond milk
  • 1 tsp apple cider vinegar

Directions:

  1. Mix the flours, baking powder, salt, cinnamon and chia seeds together in a bowl.
  2. Add the almond milk, vanilla, maple syrup and apple cider vinegar and stir until just combined.
  3. Let sit for 5-10 minutes so the chia can thicken up the batter.
  4. Cook over medium heat in a lightly oiled pan for a few minutes, flipping when bubbles appear in the middle of each pancake.
  5. Cook for another 3-5 minutes on the other side.
