I’m a big fan of instagram, and often post our meal photos on there (yes, I’m one of those people – sorry!), but I get tonnes of vegan meal inspiration from the awesome community on there, so I like to contribute too!
I eat porridge for breakfast quite a lot, and people often ask me on there how I make it, so I thought I’d pop the recipe / method down in a blog post.
This is a really easy way to make porridge, as you take it off the heat and leave it – so if your mornings are as chaotic as mine with 3 kids running around there is much less chance of burning it to the bottom of the pan!
How to make the perfect porridge:
Add 1 cup oats and 2 cups milk (oat / soya almond / whatever) to a saucepan (plus any additions like peanut butter or fruit puree).
Stir them together, bring to the boil and then turn off the heat.
Cover the saucepan with a lid and leave to stand for 5 minutes, then serve. You can add a little extra milk to cool it down or thin it out, if desired.
Topping / Add In Ideas
For the porridge in the picture I added a tablespoon of peanut putter to the porridge and mixed it in, then topped with strawberry chia seed jam, but there are limitless add ins or toppings to add to make your bowl a bit more exciting, such as:
- Peanut butter
- Chocolate / cacao powder
- Pureed fruit
- Syrup (maple, golden, agave, chocolate etc)
- Dried Fruit
- Stewed fruit
- Fresh fruit chunks
- Chocolate chips / cacao nibs
- Coconut flakes
- Nuts (whole or chopped)
Or try using a flavoured milk such as coconut milk.
