Making a bunny cake is super easy and looks really effective at a birthday or Easter party – it is simply made from two round cakes, with no waste or difficult cutting either.
My baby girl turned two on Easter Sunday, so we had a few of her teeny playgroup friends round for a little play date. We had an egg hunt, pin the tail on the bunny, pass the parcel and I got stuck into some face painting (first time I’ve ever done it, I loved it!!). I did a little buffet then served up this bunny cake.
You can use any sponge cake recipe you like to make the two cakes, a basic victoria sponge recipe works great. I used the recipe here for my vegan victoria sponge cake.
You simply leave one cake whole for the face, and cut the second cake to make ears and a bow tie as in the template here:
It’s great as none is cut off and wasted (not that we’d ever really have a problem of wasted cake!).
We iced it with a simple buttercream icing made of 140g butter (I used Pure sunflower spread), 280g icing sugar and a couple of drops of milk (I used soya).
We then decorated with strawberry laces, jelly beans and jelly tots 🙂
