
Happy Pancake day -what an awesome day of year pancake day is…. there really should be more food themed days, I love not having to think about what to cook!
We love pancakes any day of the year and I have already shared some of my favourite recipes on here for delicious vegan american style pancakes, vegan crepes and vegan chia seed pancakes , but this one is an allergy friendly recipe – gluten free and vegan pancakes!
I’m trying to eat wheat / gluten free at the moment while we figure out if Malrey has allergies (he seems to react to wheat), and while some GF versions of foods I’ve tried have been awful, these pancakes are a really yummy substitute!!
I’m going to scoff mine with some vegan nutella and bananas.

Ingredients
1 cup GF flour (150g)
1 cup oat flour ( oats blended to make a flour – 120g)
2 teaspoons gluten-free baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
1 cup soy milk (250 ml)
2 tablespoons maple syrup
2 teaspoons vanilla extract (optional)
1 tablespoon coconut or olive oil
2 bananas (mashed)
Method
Mix the flours, baking powder, salt and cinnamon together in a bowl.
Mix milk, syrup, vanilla and oil in another bowl and add the smashed bananas.
Combine dry and wet ingredients with a blender or a spoon.
Place a ladle of batter in a hot pan lightly greased and cook for about two minutes for each side.
Serve with sliced banana and agave syrup.
