Creamy Celery and Cashew Soup Recipe

Hope you are all keeping warm in the snow today, it’s been mad weather here – crazy deep snow and minus 7 degrees when I got in my car earlier! A friend mentioned having a delicious cream of celery soup in a cafe recently and I have been dying to recreate it ever since, so today when the snow day hit and we needed an ultra warming lunch – I did just that! A perfect winter warmer that is deliciously creamy, tasty and satisfying. You will need a high speend blender to get this soup super smooth, or you could try soaking your cashews overnight first o they are softer to blend.

 

 


Ingredients:

1 bunch of celery
2 cloves of garlic
1 large onion
1 courgette
1 potato
1 cup of cashews
2 cups of plant milk.
Approx 800ml veg tstock – enough to cover all the veg plus about 1 inch.

 

Method

Add first 4 ingredients to a large pan with a glug of oil and cook for 5-10 minutes until softened but not coloured. Add all additional ingredients and cook until veg are all soft and cooked. Approx 15 mins.

Blend in a high speed blender, and enjoy! L x
