
Healthy chocolate pudding – what more can I say? I was SO surprised by this dessert – you would never know it wasn’t a decadent cream-based pudding and that it is actually made from avocados!
This is gorgeous served on its own or as a dip with fruit, next time I’m going to grate in some orange zest to make chocolate orange pudding.
Soy-free, dairy-free, egg-free and vegan, I’m sure you could sub the coconut milk for almond milk too if desired.
Ingredients:
2 large (or 3 small) ripe avocados
80ml fresh coconut milk (the type from a carton not a can)
110g brown sugar
45g cocoa powder
1 teaspoon vanilla extract
A pinch of ground cinnamon
Method:
1) Cut the avocados in half and remove the stone. Scoop out the filling and add to a blender / food processor.
2) Add all other ingredients to the blender too and process until really smooth – you might need to scrape down the sides of the blender a couple of times, then blend again.
3) Refrigerate and enjoy – it’s amazing with strawberries.

I made these before i found out you did. I love mixing strawberrys in with it and make coconut cream to put on top.
That sound amazing, I need to try making coconut cream soon, I have had some in the fridge for ages and never got round to it! L x
