
Apricot and dark chocolate flapjack β€οΈ Got a huge bag of dried apricots at the Waste Not Cafe a few weeks back (ya know when we were allowed to go outside ππ) so this was perfect to use lots up!
400g dried apricots, 200g oats, 75g dessicated coconut, 2 tbsp milled flax seed, 2 tablespoons butter, 2 tablespoons sugar and around 6 tablespoons water – plonk in food processor and process til it’s all chopped and mixed, sticky and squishable into a pan (add a bit more water if needed).
Smooth with the back of a spoon and bake for around 12 mins or until lightly golden on top at 180C. Drizzle with melted dark choc π
